【摘要】:Thispracticeoutlinesproceduresfortheirradiationoffreshorfrozenmeatandpoultry.Note1-TheCodexAlimentariusCommissiondefinesmeatas"theediblepartofanymammal"andpoultryas"anydomesticatedbird,includingchicken,turkeys,ducks,geese,guinea-fowls,orpigeons"(CAC/MISC5).Note2-CurrentU.S.regulationslimitthedefinitionoflivestockspeciestocattle,sheep,swine,goat,horse,mule,orotherequineandpoultryspeciestochicken,turkey,duck,goose,andguinea(2,3).Thispracticecoversabsorbeddosesusedforinactivationofparasitesandreductionofbacterialloadinfreshandfrozenredmeatandpoultry.Suchdosesaretypicallylessthan10kGy.Thispracticeaddressesirradiationofpre-packagedproductforretailsaleorforuseasaningredientinotherproducts.Italsoaddressesthein-lineirradiationofunpackagedproduct.Thisstandarddoesnotpurporttoaddressallofthesafetyconcerns,ifany,associatedwithitsuse.Itistheresponsibilityoftheuserofthisstandardtoestablishappropriatesafetyandhealthpracticesanddeterminetheapplicabilityofregulatorylimitationspriortouse.
